Henckels chef's knife, bolster reduced. All chef's knives with an integral bolster at some point will need to have the bolster reduced so the blade can remain in full contact with the cutting board. If not, the skin of the veggies you are cutting will stay together and you will get daisy chains of peppers or green onions.
